Abstract: Current trends characterizing the attitude of the consumer towards products classified as "healthy eating" very often encourage the complete abandonment of the consumption of meat and meat products due to the possible risks that can be caused to health. The article presents the results of a marketing survey of end consumers of meat and meat products conducted in the form of a panel in a number of cities of the Russian Federation. The risks associated with the use of meat and meat products regarding the consumer's perception of the products of the category "healthy nutrition" are indicated. The directions of the development of the meat and meat products market are considered, taking into account the identification of the main trends caused by the change in the paradigm of consumer behaviour in relation to meat and meat products. The analysis of the main parameters that are priority when choosing products, in particular meat and meat products is carried out. The prospects for the development of this direction are considered, taking into account the change in the paradigm of meat and meat products consumption.
