Abstract: In modern science, it is increasingly being recognized that phenomena such as intensified production, hyperconsumption, depletion of natural resources, and a focus on material values pose systemic risks. These factors contribute to a decline in quality of life, an increase in human-related diseases, and a loss of biodiversity. In today's consumer society, irrational and excessive consumption is often perceived as a sign of well-being. This highlights the urgency of transitioning to sustainable consumption models. This thesis emphasizes not only the need to take care of the environment, but also the importance of changing established consumption habits. Therefore, in order to solve the accumulated environmental and socio-medical problems, it is necessary to adjust consumer behaviour on a global scale. In this context, the development of organic agriculture, which is an integral part of sustainable development, becomes a strategic priority. In this article, the authors have reviewed and studied research conducted by Russian and foreign scientists on the impact of consumer behaviour and sustainable development on the purchase of organic food products. Based on the analysis of existing global trends, the authors have systematized the factors according to their level of significance.
