Abstract: According to the results of the conducted research, it was determined that Russia occupies the seventh position in the world ranking in terms of total milk production after India, the USA, Pakistan, China, Brazil, Germany. The development of the production of milk and dairy products is one of the priorities in Russia. In Russia, more than 20 thousand agricultural organizations of various forms of ownership with a population of 3.1 million cows are engaged in the production of milk. In 2021, milk production in all categories of farms increased by only 0.3% compared to 2020 and amounted to 32.3 million tons. To stimulate the growth of milk production and its processing, the Ministry of Agriculture of the Russian Federation provides a set of state support measures. The food security doctrine defines the level of self-sufficiency in relation to milk and dairy products (in the milk bill) at least 90 percent. At the moment, the indicator has not been reached and is 84%.
