Abstract: The control system has to promote adaptation of the organization to the changing external and internal conditions of activity with the subsequent effective achievement of goals. The optimization of activity of the poultry-farming enterprise including improvement of system of insurance for the purpose of minimization of risks of decline in yield is presented in article; introduction of service of controlling for improvement of quality of management, orientation of administrative process to receiving the maximum profit, preservation of solvency, increase in liquidity. At insurance of risks their segmentation on four levels and key parameters is offered. The list of staff of service of controlling and the main functional requirements to them is offered.
